Berry Galette

So easy to make, and so very delicious. Pronounced with a hard “g” as in “go”, and “let” as in “let’s eat!”, this galette will impress any company you are hosting.

Ingredients to make one 9-inch galette:

Pie crust:
2/3 cup plus 2 Tbsp shortening
2 cups all purpose flour
4 to 5 Tbsp cold water

Filling:
4 cups Blackberries, raspberries, blueberries or a mixture
2 Tbsp Lemon juice
¼ cup sugar
3 Tbsp flour

Directions:

Preheat
the oven to 425 degrees and position the oven rack in the middle of the oven. Line a baking sheet with parchment paper.

Crust: In a large bowl, cut the shortening into flour using a pastry cutter until particles are the size of small peas. Sprinkle in water, 1 Tbsp at a time, tossing with fork until all flour is moistened and the pastry cleans the side of the bowl. Form the pastry into a ball. If it is still crumbling add 1-2 more tsp of water. On a lightly floured cloth-covered board shape the pastry into a flattened round. Roll the pastry, flouring the roller as needed, into a 13-inch round. Fold the round in half, then in half again, and transfer to the prepared baking sheet and unfold.

Filling: Rinse and drain the berries very well. I suggest even patting them dry with paper towels. The more water you can remove the better your galette. In a bowl, lightly toss the berries, lemon juice, sugar and flour. Spoon the filling onto the dough, leaving a 2-inch border of crust uncovered. Fold the edge up and over the filling, forming loose pleats. Bake until the filling is bubbling and the pastry is golden brown, about 25 minutes. Transfer the galette to a wire rack and let cool slightly. Cut into wedges and serve. Serves 8.
