Rainbow Fruit Salad

Ingredients:
1 large mango, peeled and diced
2 cups fresh blueberries
2 nectarines, unpeeled and sliced
2 cups halved fresh strawberries
2 cups seedless grapes
1 kiwifruit, peeled and diced
2 bananas, sliced

Dressing
1/3 cup orange juice
2 Tablespoons lemon juice 2 Tablespoons honey
¼ teaspoon ground ginger dash nutmeg

Optional Ingredients:
Substitute any other fruit that is in season or that you prefer.

Serves 14, 1/2 cup per serving

Directions:

  1. Wash all fruit.
  2. Dice mango, nectarines, and kiwi and place into a large bowl.
  3. Cut strawberries in halves or in fours, depending on size. Cut grapes into smaller pieces if serving to small children. Place into the large bowl.
  4. Slice bananas and set aside on a plate or bowl.
  5. In small bowl combine orange juice, lemon juice, honey, ginger and nutmeg. Whisk together until well combined
  6. Pour orange juice mixture over fruit and stir. Add bananas a stir a few more times.
  7. Serve in bowls or cups.
