White Chicken Chili

Ingredients:
1 Tbsp vegetable oil
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
3 cups chicken broth
1 can (15 ounces) hominy, drained
2 cans (15.5 ounces) great northern beans, drained
2 Tbsp chopped fresh cilantro
2 Tbsp lime juice
1 tsp ground cumin
½ tsp dried oregano leaves
¼ teaspoon red pepper sauce (optional)
¼ teaspoon salt (optional)
2 cups chopped, cooked chicken breast

Directions:
In 4-quart Dutch oven, heat oil over medium heat. Cook onion and garlic in oil 4-6 minutes, stirring occasionally, until onion is tender.

Stir in remaining ingredients except chicken. Heat to boiling; reduce heat. Simmer uncovered 20 minutes. Stir in chicken; simmer about 5 minutes longer or until hot.
