Cauliflower Pizza Crust
Ingredients:
1 cup cooked, riced cauliflower*
1 egg
1 cup part-skim mozzarella cheese, shredded
½ teaspoon dried fennel
1 teaspoon dried oregano
2 teaspoons dried parsley
Directions:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick spray. Combine the cauliflower, egg and mozzarella. Press evenly on the pan using a fork. Sprinkle with fennel, oregano and parsley. Bake for 12-15 minutes. Remove from the oven.
Top with your favorite toppings. Anything goes, but I like pizza sauce, sliced mushrooms and chopped spinach that was previously frozen and thawed. Place under a broiler at high heat until cheese is melted. Serves 8.
*Cook or steam cauliflower until tender. Cool slightly and shred with a food processor or cheese grater.
