Cheddar and Cauliflower Soup


Prep time: 25 - 30 minutes
Makes 4 servings

Ingredients:
2 tsp olive oil
1 cup finely chopped onion
3 Tbsp all-purpose flour
¼ tsp (salt optional)
dash of pepper
4 cups reduced sodium chicken broth
4 cups cauliflower florets
1/4 cup half and half
1 cup shredded reduced-fat sharp cheddar cheese

  • Steam cauliflower until tender about 14 minutes. While steaming, heat oil in a large saucepan over medium heat. Add onion. Cook 5 to 7 minutes or until tender. Stir in flour, salt, and pepper. Add broth and whisk to combine. Bring to a simmer, whisking occasionally. Using a food processor, puree the steamed cauliflower and ¼ cup half and half until smooth. Whisk cauliflower puree into the broth mixture; simmer 5 minutes. Remove from heat and stir in cheese.
  • Let mixture cool slightly. In a blender, blend mixture half at a time until smooth.
